
Tomato soup with crispy star

Tasty Christmas recipe to start Christmas dinner with. A tasty appetizer with a festive touch. And the nice thing is: it's not that hard to make either! Are you getting into the kitchen for the holidays?
Ingredients and supplies:
500 gr passata di pomodoro
500 ml water
250 gr cherry tomatoes
1 onion
1 tsp curry powder
70 gr tomato puree
1 tablet Maggi seasoning tomato soup spice mix
250 gr fine soup vegetables
125ml whipping cream
2 tsp sugar
1 pinch of salt
1 pinch of pepper
4 slices of puff pastry
1 egg
a handful of basil

STEP 1.
Take a large pan and pour in the passata di pomodoro and 500 ml of water. Heat the pan, do not let it boil yet. Meanwhile, chop cherry tomatoes and onion. When the pan is hot, add the curry powder and tomato paste and the onion and cherry tomatoes can be added. Bring to a gentle boil.
STEP 2.
After a few minutes, you can add the soup vegetables and cook them again for a few minutes. If you want a smooth soup, in this step you can choose to puree the soup with a hand blender. Season the soup with the cream, pepper and sugar. Taste occasionally with your spoon to see if the soup already has the desired flavor. Do blow, because the soup is oh-so-hot!
STEP 3.
While the soup is warming you can preheat the oven to 200 degrees. Take the slices of puff pastry and cut or punch out one star per puff pastry slice. Brush the stars with egg on both sides and bake for 20 minutes until golden brown. Use the stars to decorate the soup and finish with a handful of basil.
Tip: You can of course make the soup a day in advance. Just add the whipped cream preferably on the day of serving and bake the stars on the day itself.
