
Tomato soup with crispy star

A delicious Christmas recipe to start your Christmas dinner with. A tasty starter with a festive touch. And the best part is: it's not that difficult to make! Will you be cooking for the holidays?
Ingredients and equipment:
500 g passata di pomodoro
500 ml water
250 g cherry tomatoes
1 onion
1 tsp curry powder
70 g tomato paste
1 Maggi seasoning tablet tomato soup herb mix
250 g fine soup vegetables
125 ml whipping cream
2 tsp sugar
1 pinch of salt
1 pinch of pepper
4 slices of puff pastry
1 egg
a handful of basil

STEP 1.
Take a large pan and pour in the passata di pomodoro and 500 ml of water. Heat the pan, but do not bring it to the boil yet. Meanwhile, chop the cherry tomatoes and onion. When the pan is hot, add the curry powder and tomato purée, then add the onion and cherry tomatoes. Bring the mixture gently to the boil.
STEP 2.
After a few minutes, add the soup vegetables and cook for a few more minutes. If you want a nice and smooth soup, you can use a hand blender to purée it at this stage. Season the soup with the heavy cream, pepper, and sugar. Taste occasionally with your spoon to see if the soup has the desired flavor. Be sure to blow on it, because the soup is very hot!
STEP 3.
While the soup is heating up, preheat the oven to 200 degrees. Take the slices of puff pastry and cut or cut out one star per slice. Brush the stars on both sides with egg and bake them for 20 minutes until golden brown. Use the stars to decorate the soup and finish it off with a handful of basil.
Tip:you can, of course, make the soup a day in advance. In that case, it is best to add the whipped cream on the day you serve it and bake the stars on the same day.
