Quick mini strawberry-blackberry galettes

You will need
1 roll of quiche and/or pie dough
150g strawberries
75g blackberries
1 tsp vanilla extract
1 tbsp cornstarch
75g almond paste
1 egg
1 tbsp granulated sugar
Baking sheet and parchment paper
Pastry brush

STEP 1

Preheat the oven to 190 degrees. While you wait for the oven to reach the right temperature, you can get started on the puff pastry. Roll out the puff pastry on your work surface and use a cookie cutter or glass to cut out 5 to 6 circles. Place these on a baking sheet lined with parchment paper, neatly next to each other like cheerful little suns.

Now it's time to prepare your fruity filling. Cut the strawberries into thin slices and mix them in a bowl with the juicy blackberries, a dash of vanilla, and a little cornstarch.

STEP 2

Take another bowl and mix the almond paste with half a beaten egg. Stir well until you have a smooth mixture. Spoon the almond paste onto the puff pastry circles, but be careful! Leave a border of about 1.5 cm around the outside so that you can fold the edges nicely later.

Place the fruit mixture on top of the almond paste and fold the edges of the puff pastry inwards so that the fruit is well enclosed. Brush the edges with the remaining half egg and sprinkle a little granulated sugar over them for an extra crispy and sweet bite.

STEP 3

Slide the baking tray into the preheated oven and bake the tartlets for 25-30 minutes until golden brown. That smells delicious!

When the tarts are ready, remove them from the oven and leave them to cool for a moment. These delicacies are a real treat for your taste buds, whether served warm or cold!
