
Quick mini strawberry-strawberry galettes

You will need
1 roll of quiche and/or pie dough
150g strawberries
75g blackberries
1tl vanilla extract
1 tsp cornstarch
75g almond paste
1 egg
1 tsp granulated sugar
Baking tray and baking paper

STEP 1
Preheat the oven to 190 degrees. While you wait for the oven to reach the right temperature, you can get started on the puff pastry. Roll out the puff pastry on your work surface and use a cutter or a glass to cut out 5 to 6 rounds. Place these on a baking sheet lined with baking paper, neatly side by side like happy little suns.
Now it's time to prepare your fruity filling. Thinly slice the strawberries and mix them in a bowl with the juicy blackberries, a touch of vanilla and a little cornstarch.

STEP 2
Take another bowl and in it mix the almond paste with half a beaten egg. Stir well until you have a smooth mixture. Spread the almond paste with a spoon over the puff pastry rounds, but be careful! Leave an edge of about 1.5 cm on the outside, so that you can later fold the edges.
Place the fruit mixture on top of the almond paste and fold the edges of the puff pastry inward so that the fruit is well enclosed. Brush the edges with the remaining half egg and sprinkle a little granulated sugar on top for an extra crunch and sweet bite.

STEP 3
Slide the baking tray into the preheated oven and bake the tarts for 25-30 minutes until golden brown. How good that smells!
When the tarts are done, remove them from the oven and let them cool for a while. Both hot and cold, these treats are a real feast for your taste buds! And for an extra summer touch, serve them with a scoop of ice cream. That's how to make these tarts the perfect summer dessert!
