Saint Nicholas trifle

STEP 1

Time to get the mixer out of the cupboard and grab a nice bowl! Whip the cream with the sugar and a pinch of speculaas spices until light and fluffy, but not quite stiff—then it's perfect!

STEP 2

Set the mixer to the lowest setting and gently fold the mascarpone into the whipped cream mixture. Make sure it becomes a smooth, creamy mixture. Now you have made your own speculaas trifle! 

Now it's time to cut the cake into pieces and peel the mandarins. Then divide them into pieces.

Now that everything is ready, you can start building the trifle!

STEP 3

Start with a layer of speculaas cream; use half of it. Crumble 3 speculaas cookies over it. Spread half of the mandarin segments over it. Then add half of the cake cubes and top with a layer of orange yogurt.

Then you can place 7 speculaas cookies around the edge. Next, scatter some mandarin segments over the top, but be careful to save some for decoration. Now add the remaining cake cubes and finish the trifle with the speculaas cream.

STEP 4

Decorate as desired with the remaining mandarins and Sinterklaas chocolates. So much fun!
