
Mother's Day breakfast skewers

Surprise mom this year with a loving and delicious Mother's Day breakfast! With this fun recipe from Hemelssbakken, make these cheerful breakfast skewers with mini pancakes, fresh fruit and a touch of Nutella or honey. They are not only delicious, but also super fun to make with the kids. Serve them on the beautiful tableware of Zusss and your Mother's Day can not go wrong!
You will need
- 125g flour
- 20g sugar
- Pinch of salt
- 0.5 tsp baking powder
- 150ml milk
- 1 egg
- 1 tsp vanilla extract
- Frying pan + butter for baking
- Cocktail sticks
Toppings
- Fruit : banana, strawberry and blueberries
- Nutella, honey and powdered sugar

STEP 1
Place the flour, sugar, a pinch of salt, baking powder, milk, egg and vanilla extract in a bowl. Mix everything until it forms a smooth batter with no lumps.

STEP 2
Heat a knob of butter in the skillet and pour small mounds of batter into the pan, the size of poffertjes. Fry the mini pancakes for about 1 minute per side until golden brown and fluffy. Then let them cool briefly (so the Nutella doesn't melt when you add it).

STEP 3
Thread the mini pancakes onto cocktail sticks and alternate with pieces of banana, strawberry and blueberry. In between the layers, you can spread some Nutella or honey for extra sweet happiness. Serve on a pretty plate, sprinkle with powdered sugar and voila, a breakfast to dream of!
