
Mini Easter brunch quiches

Pop these adorable mini Easter brunch quiches in the oven! Not only are they delicious, but they're also super fun to make. You will need
1 large roll of pie dough
2 eggs
125 g crème fraîche
Salt & pepper
Cupcake pan + butter for greasing
Variation 1
75g smoked chicken breast, diced
50g grated cheese (e.g., mature or aged cheese)
1/4 tsp nutmeg
Variation 2
50g spinach leaves (fresh, finely chopped)
50g feta cheese, crumbled
1 tbsp pine nuts

STEP 1
Preheat the oven to 200°C (convection, of course). Grease the molds with butter. Then cut 8 nice circles out of the pie dough and place them snugly in the molds.
Beat the egg cheerfully with the crème fraîche and sprinkle with a pinch of salt and pepper for some extra spice.

STEP 2
Now it's getting really fun: time to make the fillings! Grab your mixing bowl and get started.
Smoked chicken & cheese
Add the chicken cubes, a generous handful of grated cheese, and a pinch of nutmeg to the egg mixture. Stir well until everything is nicely mixed.
Spinach, feta, and pine nuts
Finely chop the spinach and crumble the feta. Mix everything into the egg mixture and sprinkle with some roasted pine nuts for a delicious crunch.
Extra tip: Want to add some extra flavor? Add a pinch of pepper, salt, or a spice mix. Make it your own party!

STEP 3
Divide the fillings evenly among the ramekins so that each mini quiche is equally delicious. Sprinkle the pine nuts over the spinach version for that extra crunch and finish it off. Then place the ramekins in the oven for 20-25 minutes and wait patiently until they are golden brown and deliciously fragrant. Once they come out of the oven, let them cool in the mold for a while.
Serve them warm for the most delicious experience, but they are also delicious at room temperature. Perfect for any occasion!
