
Mini Easter brunch quiches

Hop into the oven with these adorable mini Easter brunch quiches! They are not only for savoring, but also super fun to make. With this recipe, in collaboration with Hemelssbakken, you will conjure them up on the table in two delicious variations. Are you going to surprise your company with these savory snacks? What you need
1 large roll of pie dough
2 eggs
125 g crème fraîche
Salt & pepper
Cupcake baking pan + butter to grease
Variant 1
75g smoked chicken breast, diced
50g grated cheese (e.g. mature or old cheese)
1/4tl nutmeg
Variation 2
50g leaf spinach (fresh, finely chopped)
50g feta cheese, crumbled
1 tbsp pine nuts

STEP 1
Preheat the oven to 200°C (hot air, of course). Coat the molds with butter. Then cut 8 pretty rounds from the pie dough and give them a cozy place in the molds.
Beat the egg merrily with the crème fraîche and sprinkle with a touch of salt and pepper for some extra zest.

STEP 2
Now it really gets fun: time to make the fillings! Grab your mixing bowl and go wild.
Smoked chicken & cheese
Add the diced chicken, a generous handful of grated cheese and a pinch of nutmeg to the egg mixture. Stir well until everything is nicely mixed.
Spinach, feta & pine nuts
Finely chop the spinach and crumble the feta. Mix everything into the egg mixture and sprinkle in some toasted pine nuts for that nice crunch.
Extra tip: Want a little more flavor? Add a pinch of pepper, salt or a spice mix. Make it totally your own party!

STEP 3
Divide the fillings evenly among the trays so that each mini quiche is equally delicious. Sprinkle the pine nuts over the spinach variety for that extra crunch and finish off. Then place the trays in the oven for 20-25 minutes and wait patiently until they are golden brown and deliciously fragrant. Once they come out of the oven, let them cool briefly in the mold.
Serve them warm for the very best experience, but they are also delicious at room temperature. Perfect for any occasion!
