Crunchy cookies

These crunchies are for eating-literally! Crunchy and so delicious you'll want to snack any time of day. Perfect for that extra bit of fun with your tea! With this recipe from Zusss and Hemelssbakken you conjure up the most delicious cookies on the table in no time. Feel like baking?

You will need this:
120g cream butter

100g granulated sugar
100g light brown caster sugar
1 egg
2tl vanilla extract
250g flour
1tl baking powder
2tl cinnamon
Pinch of salt
Baking tray and baking paper
2tl granulated sugar and a pinch of cinnamon for the cinnamon sugar

STEP 1

Turn on the oven to 175 degrees, let it get nice and warm! Get the mixer out and beat the butter and sugar for 2 minutes until fluffy and fluffy. Scrape the edges of the bowl with a spatula, and there goes the egg and a dash of vanilla! Mix again on full speed for about 2 minutes. Ready for the next step!

STEP 2

Again, scrape the edges of the bowl nice and clean-don't let any crumbs escape! Then sprinkle in the flour, baking powder, a pinch of cinnamon and a little salt. Mix everything on low until you have a beautiful, cohesive dough. Roll 15 equal-sized balls out of the dough and place them on the baking sheet with enough space between each other. Mix 2 tablespoons of sugar with a touch of cinnamon and sprinkle generously over all the balls.

Then bake them for 15-20 minutes until the edges are golden brown and deliciously crispy.

Let the cookies cool completely, store them (for up to 4 days!) in Zusss' beautiful storage jars, and treat yourself to a delicious treat!
