Crispy cookies

You will need:
120g butter
100g granulated sugar
100g light brown caster sugar
1 egg
2 tsp vanilla extract
250g flour
1 tsp baking powder
2 tsp cinnamon
Pinch of salt
Baking tray and baking paper
2 tbsp granulated sugar and a pinch of cinnamon for the cinnamon sugar

STEP 1

Preheat the oven to 175 degrees Celsius and let it heat up nicely! Take the mixer out of the cupboard and beat the butter and sugar for 2 minutes until light and fluffy. Scrape the edges of the bowl with a spatula, and then add the egg and a dash of vanilla! Mix everything again at full speed for about 2 minutes. Ready for the next step!

STEP 2

Scrape the edges of the bowl clean—don't leave a single crumb behind! Then sprinkle in the flour, baking powder, a pinch of cinnamon, and a little salt. Mix everything on low speed until you have a beautiful, cohesive dough. Roll the dough into 15 equal balls and place them on the baking sheet with enough space between them. Mix 2 tablespoons of sugar with a pinch of cinnamon and sprinkle generously over all the balls.

Then bake them for 15-20 minutes until the edges are golden brown and deliciously crispy.
