Healthy pumpkin gifts

A Christmas recipe to surprise your guests at the table this holiday season. Small gifts made of filo pastry with a healthy filling. Serve them as a side dish or as a tasty snack with drinks. If you want to know how to make them yourself, check out the recipe below!

Ingredients and equipment:

8 slices of filo pastry
250 g pumpkin
80 g feta cheese
3 tsp plain hummus
60 g cashew nuts
50 g chickpeas
1 tsp ground cumin seeds
1 tsp dried rosemary
40 g raisins
½ tsp agave syrup
ground pepper and salt
olive oil
baking tray
thin string

STEP 1.

Fill an oven dish with finely chopped pumpkin pieces, and stir in 1 teaspoon of rosemary and 2 teaspoons of olive oil. Place the oven dish in a preheated oven at 175 degrees for approximately 20 minutes. Now continue with the rest of the filling!

STEP 2.

Mix finely chopped cashews, chickpeas, raisins, ground cumin seeds, feta cheese, hummus, agave syrup, and a pinch of salt and pepper. Once the pumpkin pieces are ready, you can add this to the rest of the filling. Now you can get started wrapping the gifts.

STEP 3.

For a firm bite, place two slices of filo pastry on top of each other. Make sure you have brushed both slices with a little oil. Place three tablespoons of your pumpkin filling in the middle of the slices. Leave 1½ cm free at the edge. Leave 3 cm free at both ends, as you will use this to form the bows later.

STEP 4.

Now you can roll up the gifts and tie a bow around the ends. Don't pull the bows too tight, so that the dough has some room to expand. Brush each rolled-up pumpkin gift with a little oil. Now they are ready to bake in the oven for 20 to 25 minutes until golden brown. The oven is still preheated to 175 degrees. Wait a moment and...Enjoy!
