Winter coconut balls

A healthy Christmas recipe to enjoy with coffee, tea or mocktail. Will you serve these winter coconut balls as a side dish or feast on them as a snack? Either way, you will enjoy them.
Quantity: 6 to 8 balls
Preparation time: 15 min.
Ingredients and supplies:
50 gr seedless dates
2 tsp coconut oil
80 gr unroasted and unsalted cashews
2 tsp linseed
2 tbsp coconut flakes
½ tsp ginger powder
½ tsp cinnamon
Blender or hand blender
Soak the seedless dates gently for 15 minutes in hot water. Meanwhile, you can melt the coconut oil to then mix with the cashews, flaxseeds, 1 tbsp coconut flakes, ginger powder and cinnamon.
When the 15 minutes are up, drain the dates. As you drain, save 2 tbsp of the water in which the dates have been violence. The water you add to the rest of the mixed ingredients. Puree the mixture in the blender or with a hand blender.
Now you can start rolling the balls. Decide on the size of the balls. Choose 6 large balls or 8 smaller ones. Did you roll all the balls? Then roll them through the remaining tablespoon of coconut flakes. The balls are now ready to go into the refrigerator for an hour and a half. They are ready to be enjoyed!
