Winter coconut balls

A healthy Christmas recipe to enjoy with coffee, tea, or a mocktail. Will you serve these winter coconut balls as a side dish or enjoy them as a snack? Either way, you're in for a treat.

Number: 6 to 8 balls
Preparation time: 15 min.

Ingredients and equipment:

50 g pitted dates
2 tsp coconut oil
80 g unroasted and unsalted cashews
2 tsp flaxseed
2 tbsp shredded coconut
½ tsp ground ginger
½ tsp cinnamon
Blender or hand blender

STEP 1.

Soak the pitted dates in hot water for 15 minutes until soft. Meanwhile, melt the coconut oil and mix it with the cashews, flaxseed, 1 tablespoon of grated coconut, ginger powder, and cinnamon.

STEP 2.

When the 15 minutes are up, drain the dates. When draining, save 2 tablespoons of the water in which the dates were soaked. Add the water to the rest of the mixed ingredients. Puree the mixture in a blender or with a hand blender.

 

STEP 3.

Now you can start rolling the balls. Decide for yourself how big you want them to be. Choose between 6 large balls or 8 smaller ones. Have you rolled all the balls? Then roll them in the remaining tablespoon of coconut flakes. The balls are now ready to go into the refrigerator for an hour and a half. Enjoy!
